Oliver's motto is to "take what the fruit gives" and from there, they intervene as little as possible. Based in Herefordshire, Oliver's Cider and Perry aims to make a distinguised selection of fine Herefordshire and Three Counties ciders and perries, and to provide a unique personal service to their customers.
When their (mostly) handpicked and unsprayed fruit arrives at the mill it is closely checked over to work out milling proportions that will ensure there is enough acidity balance in each pressing. The fruit is then washed and milled before being pressed on either a rack and cloth press or a belt press. The juice is fermented in small batches using natural wild yeast.
Oliver's put considerable thought into each of their ciders and perries, often drawing up plans for each barrel or tank. Oliver's allows the juice to dictate it's own future - single varietal, blend, vintage, naturally conditioned... so that a harmonious balance of sweetness, acidity, and astringency can be achieved.
