The Raison d'Etre is the quintessential expression of what cidermaking means to Ross on Wye. This 8.4% ABV cider is bone dry, fermented using wild yeast in an oak cask and patiently aged before bottle conditioning. 2018 was an exceptional year for cidermaking. The hot summer meant that sugars, alcohol, and flavour intensity sky-rocketed, making this an exquisite vintage. The Raison d'Etre is a blend of Dabinett and Michelin - two bittersweet varieties that are grown on Broome Farm and have a deeply tannic flavour profile. This is Ross on Wye's favourite cider from the best year cidermaking has seen in the last decade. It is not to be missed!
Adam Wells interviewed Albert from Ross Cider ahead of the release and the article can be found on The Malt.
The Harry Masters Jersey is a triple vintage (2016, 2017 and 2018) single variety cider. This cider apple is a classic bittersweet, which is beautifully rich, juicy, tannic, astringent and a little challenging. Ross on Wye have masterfully blended cider made in three different years and created a full-bodied and bone dry cider that is truly standing the test of time. It is naturally fermented using wild yeast, with some oak cask fermentation which creates a delicate hint of smokiness and richness.
The Blakeney Red is a rich, vibrant fruity blend of single variety perry, blended using one third oak cask from 2018 and two thirds of the young and lovely 2019 season. The resulting blend is a complex mix of seasons that thrills the tastebuds with a full body and a mischievous sweetness. This 6% ABV full-juice perry is made using Blakeney Red Perry pears, grown in the sight of the famous May Hill and handpicked for pressing, before being naturally fermented using wild yeasts.
