Ross on Wye Red Pear Perry 2019 is a traditional style, bottle-conditioned, single-variety perry with a creamy, nutty sweetness that gives complexity and delicacy to the soft finishing tannins. It was fermented using wild yeasts and has good clarity, having been racked twice.
Also known as Aylton Red, Red Pear is a traditional pear variety mentioned in John Evelyn’s Pomona of 1662 and grown commercially in Herefordshire and Worcestershire for several hundred years. Ross has five red pear trees, however, the 2019 season was the first in several years where they yielded enough fruit to press, filling two small barrels.
