Ross on Wye Stoke Red 2019 is a traditional, single variety cider, which halted fermentation early, resulting in a cider of luscious flavour with natural apple sweetness providing a delicate balancing note. This is a single-barrel bottling of just 280 bottles.
Stoke Red is a late-season, bittersharp apple, with a balance of acidity and tannin. The fruit came from a single old tree, which in 2019 produced a huge crop of apples. These yielded enough juice to fill a whole barrel, which fermented using natural wild yeasts. However, without any intervention, it halted fermentation early, keeping some of the natural sugars.
The Johnson family has made craft cider and perry at Broome Farm in Herefordshire since the 1930s and have won a plethora of awards, including BBC Food and Farming Winner 2019.
