Made from a Kingston Black apples, this cider is a traditional-style, dry cider, which has a good body, a strong fruity undercurrent and a wholesome earthy astringency. The apples were hand-picked from a traditional, unsprayed orchard in West Dorset. The apples were washed with natural spring water before being pressed using a pack press. The fresh juice was then allowed to ferment and mature, with nothing added other than some cultured yeast to help guide the fermentation.
Kingston Black is a traditional bittersharp cider apple that originated in Somerset in the 1800s. Unique for having both luscious acidity and prominent tannins, it was described as being "allegedly the perfect cider apple" by Andrew Lea. It became widely planted across England and Wales, despite the tree itself being frustrating to grow.
Temple Cider, otherwise known as Paul and Jo, is a new and enthusiastic small-scale craft cider producer in West Dorset, close to the borders of both Devon and Somerset. The cider is named after Paul and Jo's old rescue dog, Milo. Their other dogs, Millie and Lulu, are not jealous at all.
