Temple Cider Yarlington Mill is a traditional-style, dry, full-juice, single-variety sparkling cider. The fruit was hand-picked in two batches over four weeks from a traditional, unsprayed orchard, before being washed with natural spring water and pressed using a pack press. The fresh juice was then allowed to ferment and mature, with nothing added other than some cultured yeast to help guide the fermentation. The resulting cider is enjoyable, just off-dry with a refreshing crispness.
Yarlington Mill is a traditional, late-season, bittersweet apple. First found growing out of a wall at Yarlington in Somerset during the late 19th century, it was subsequently grown and popularised by Harry Masters. Appreciated for its potential to make high-quality cider, it became widely planted in traditional orchards.
Temple Cider, otherwise known as Paul and Jo, is a new and enthusiastic small-scale craft cider producer in West Dorset, close to the borders of both Devon and Somerset.
