Made from a blend of six varieties traditional bittersweet and bittersharp cider apples, Whiskey Barrel Aged is a traditional-style, dry, full-juice cider with a smooth, dry taste and a subtle but distinctive whiskey finish.
The apples were hand-picked from two traditional, unsprayed orchards, one on the Somerset levels and some additional fruit from an old orchard in West Dorset. Although made using the same apple varieties from the same orchards as Milo's Magic, a different blend is used for Whiskey Barrel Aged. The apples were washed with natural spring water before being pressed using a rack and cloth press. The fresh juice was then allowed to ferment and spent three months maturing in a whisky cask, with nothing added other than some cultured yeast to help guide the fermentation.
Temple Cider, otherwise known as Paul and Jo, is a new and enthusiastic small-scale craft cider producer in West Dorset, close to the borders of both Devon and Somerset.
