Wilding Cider Run Deep is a dry, still, blend of traditional varieties with a distinct Somerset character. A blend of Harry Master's Jersey (35%), Ellis Bitter (30%), Yarlington Mill (15%) and Foxwhelp (20%), each variety comes from a different traditional orchard, all over 30 years old, and some much older. This cider has been co-fermented in stainless steel initially before half was racked into old oak barrels (ex red wine, second fill of cider, over ten years old) for three months maturation. It was bottled still, under cork, a year after pressing, just in time to make space for the new batch. This is in many ways an old-fashioned blended cider with no messing about.
Aromas are heady and complex with notes of orchard, baked apple, barrel, tobacco, leather, peach jam. The tannins are soft but full and the typical Foxwhelp acidity is fairly assertive. It's bone dry and so great with food, especially salty snacks, very mature cheddar and it has the robustness for lots of rich meat dishes. If you liked Wilding's 2018 Chisel Jersey blend then they think you'll like this - it has similar applications but with the tannins toned down and the acidity turned up.
Wilding Cider is a small yet acclaimed Somerset maker based in Chew Magna, set up in 2018 by Beccy and Sam Leach after some years of hobby cidermaking. They cultivate and harvest traditional cider varieties from their own natural orchard, along with other unsprayed orchards they look after. They avoid additives and preservatives, preferring to harness wild yeasts and natural techniques, and allow their creations oodles of time to mature before releasing them.
